This is one of the most important aspects to resolve when designing kitchens. To guarantee a hygienic and safe environment for the kitchen worker gas combustion fumes, steam and smells must all be ventilated externally.
Every cooking block that emits fumes, produced from the cooking of food or the combustion of gas, must be equipped with a ventilation hood.
Generally, these have to be installed at a height of 1900mm (from the lower edge of the hood to the floor) but, obviously, it has to be compatible with the equipment below. On the whole, they are made of stainless steel for ease of cleaning and resistance to rust.

 

Types of ventilation systems
1.Exhaust only.
2. Exhaust with fan to re-integrate the extracted air.
3. Exhaust with air compensation system.

4. Exhaust with air compensation system and fan to re-integrate the extract ed air.

5. Exhaust with a system for neutralizing fumes and smells.
